Cowboy SPAM

Ingredients

  • 1 can Low Sodium SPAM®
  • 1 jalapeño, sliced
  • 1 cup brown sugar
  • Honey, for drizzling
  • Derek Wolf’s Cowboy Candy BBQ Rub, to taste

Directions

  1. Cut SPAM into about 8 slices, approximately 1/4″ thick.
  2. Lay SPAM slices on either a grill grate or wire grid and cover the top of each slice with a layer of brown sugar.
  3. Place jalapeño slices on top of the brown sugar and drizzle with honey.
  4. Season to taste with Derek Wolf’s Cowboy Candy BBQ Rub.
  5. Place the rack over a baking pan (to catch drippings) and place in a preheated Gozney oven on low, away from flame.
  6. Rotate every couple of minutes until crispy, caramelized and brown (to keep sugar from burning).
  7. Remove from oven and let cool on rack until liquid starts to harden.
